Introduction

Tasty side dish that is good with most anything. It is full of protein and vegetables - what could be better? Tasty side dish that is good with most anything. It is full of protein and vegetables - what could be better?
Number of Servings: 4

Ingredients

    1 can chickpeas/garbonzo beans
    1/2 bag spinach
    2 tbsp olive oil
    1 clove garlic or 1 tsp garlic powder (optional)

Directions

Chop garlic.

Add olive oil to pan.

Add chopped garlic.

Saute' chickpeas/garbanzo beans with spinach in olive oil. If using garlic powder rather than chopped garlic add that now.

Saute' until chickpeas are tender and not grainy.

Enjoy alone or with meal. Yum!

    I added fire-roasted tomatoes and served over some thinly sliced, grilled polenta. Excellent main course dish for a meatless dinner! Delicious and will make again. - 3/6/08

    Everybody, including my 3 year old liked it. I can't resist messing with any recipe, so I added a cup of chopped tomatoes, some ground black pepper, and I used only 1 tbsp. of the oil - that was more than enough - otherwise I think it would have been greasy. - 1/16/08

    I saute the garlic and spinach and I added onions as well until the spinach is slightly wilted then added the beans since they are already cooked. Delicious! - 1/14/08

    This was delicious! For those who thought the spinach was too wilted or the garbanzo beans were mushy/grainy. You cooked it too long. I added in baby bellas, roma tomatoes, lots of garlic, and a squeeze of lemon juice and it was awesome! Taking the leftovers to work tomorrow. :) - 4/16/12

    funny, I just made up a recipe last night but I used small white beans and spinach it was yummy kinda like pasta fagilo without the pasta. I use 1/4 cup of beans and lots of spinach to serve just one - 6/21/09

    Added onion, mushrooms, black pepper, red pepper flakes, & lemon juice, as suggested here, plus sesame-seed salt. All the ingredients are good, but it was still too bland for me. My husband did like it, however. - 3/26/09

    We tried this for dinner tonight and really liked it. We did add fresh lemon and salt & pepper. Next time, I will add some onion another clove of garlic and tomatoes. It is very good. We do not use canned beans, so I used a cup of our cooked beans. We liked it good recipe. - 3/14/09

    Actuallly - I prefer this as a non-cooked spinach idea - really a salad rather than a side dish. Super easy to fix!

    this was very good..not sure i cooked the chickpeas long enough, they weren't mushy...so if anyone wants to add some time guidelines to cooking, that'd be great! but still, was good. we think we'll add it to a pasta and maybe tomatoes....yum :) - 1/21/08
