Ingredients

    1 large zucchini
    1 large raw potato
    1/2 cup raw onions, chopped
    1 large egg
    1/4 cup red peppers, chopped
    1/4 cup green peppers, chopped

Directions

Wash the zucchini and wash and peel one potato.
Place into food processor and shred.
Place these into a bowl.
Add the chopped onion, chopped peppers, and raw egg and mix well.
(You may add a second egg to the mixture if desired.) Season with salt and pepper.
Spray pan with nonstick cooking spray.
Form veggies into pancake shapes and cook over medium heat until done.

    I have frozen zucchini which I put in the blender along with a grated potato. I used egg white and chopped up onions and turkey bacon bits. - 9/2/10

    I used some besan flour mixed with water as a binder. Used some mixed vegetable salt and hungarian red paprika as seasoning. Baked them in my pie maker rather than cooked them in a pan.
    I left out the egg to make it a meal.

    I am making this dish for the second time and we just love it! Mine turned out sort of ugly, but they tasted great! I think they'll look better this time since I have had a little practice. My husband puts salsa or tomato sauce on his, and I eat mine plain. We used 2 egg whites and an egg last time. - 10/22/10

    These didn't hold together for me at all. I'm thinking they need a binder, like flour... I would have preferred to have made scrambled eggs and add the other (pre-cooked) ingredients because it basically turned into mush. - 1/11/09

    Just wondering...why do people make comments (and even rate the recipes) before they've tried it? Those comments are not very helpful and sometimes you have to wade through quite a few of them. I did try the recipe and it was very good. Thanks for posting it. - 1/12/11

    Loved it. It tasted like a cross between hashbrowns and a veggie omelette, maybe because I opted for an extra egg white. The leftovers didn't warm up so well though...so it goes. - 1/14/09

    will make again. I didn't add enough of the additional spices, so it was a little bland (I'm a very inexperienced cook), so I added a little low sodium soy sauce for flavor. Even my husband loved it! - 1/13/09

    I used about 2 cups of shredded zucchini and 3 ounces of crumbled / mashed light tofu & 3 egg whites (to cut down on fat, cholesterol & calories ) which made a wonderful light lunch. - 1/10/09

    I put the mixture in a baking pan and baked it for 20 minutes in a 375 degree oven. When I went to pan fry the mixture it didn't work out. - 7/5/15

    I fixed these today. The recipe states to shred, maybe it should say grate because I could not get them to form a patty. I added an extra egg and I even added about 1/2 cup flour, they would not stick together. They tasted ok after I added some pepper but I am not sure I will fix again. - 7/28/20
