Ingredients

    2 2/3 cups unprocessed wheat bran
    1 1/3 cups boiling water
    3 large egg whites
    1 1/2 cups apple sauce
    3 small apples, chopped
    1 1/2 cups low-fat soy or skim milk
    1 1/2 cups whole wheat flour
    2/3 cup soy flour
    4 Tbs baking powder

Directions

Pour boiling water over 1/2 of the wheat bran and stir. Add egg whites, apple sauce, chopped apples, and milk, stiring after each addition. Sift flours and baking powder together and add to mix, blending thoroughly. Add remaining wheat bran and stir just to moisten.
Spoon into muffin tin sprayed with cooking spay or lined with muffin cups. Bake in preheated 400 degree oven for about 15 minutes or until toothpick comes out clean.
These freeze well and can be thawed or reheated in a microwave.
Makes 24 muffins.

    Good, but a touch bland - I think they need a dash of salt, or cinnamon, or even a wee bit of sugar - something. Great texture, though! - 8/20/08

    I made these for my child who has an impacted colon (eww, I know) Goodness, they're bitter! Even after smothering them in honey, I can barely choke one down so I know she won't eat them. I don't bake much (too precise) so can someone suggest what I can do to make this recipe a little more palatable? - 10/26/11

    Your calorie calculations are way off! The flours are definitely wrong - should be 1.5C for the whole wheat and .66C for the soy - 1/26/11

    Very Good
    These did come out a bit bitter for me, but I also think that that is just the nature of bran. However, I used my own applesause (In which I used only apples, no sweetener). The remaning dough I added honey to and they came out great, of course it will change the nutritional info a bit. - 10/18/07

    Excellent! We had these for dinner with eggs and sausage and so forth and hubby ate 3 of them! I left the peel on the red apples and that was fine. Next time, I will add some cinnamon and nutmeg! - 9/14/07

    Very Good
    I'm not a big bran muffin fan, but I wanted to try this one. It's different than other recipies that I've used and I know that fiber is all-important to my health. I was not disappointed. This is a bran muffin that I'll eat again and again! Thank you! - 9/1/07

    Incredible!
    Very modest in calories, light & fluffy, but incredibly high in protein and fiber! Nutrient-dense, but tasty -- NANCYJAC has done it again. My husband and daughter like these too. Not sweet, like typical muffins, but wonderful for a healthy on-the-go breakfast or snack! - 8/21/07
