Introduction

Ingredients

    1 medium zucchini (about 10 ounces)
    Pinch salt
    Pinch black pepper
    Parchment paper



Tips

I prefer free flowing salt for this recipe since a little will go a long way! Feel free to change up or add additional spices or seasonings. Cayenne pepper, dried thyme, or rosemary will all work well with these chips.


Directions

Cut the unpeeled zucchini into 1/16 inch slices using a knife, the slicing blade of a food processor, or a mandoline.
Place cut slices onto paper towels, and pat them dry.

MICROWAVE INSTRUCTIONS: (UPDATED)
Place a sheet of parchment paper atop a microwave-safe plate.
Mist the zucchini slices with cooking spray, then sprinkle with salt and pepper. Place each slice on the plate, being careful not to overlap the slices.
Microwave on high for up to six minutes, let rest for one minute, then cook another minute. You want to let the chips rest when they appear to be drying out but are not yet browned.
Remove any chips that have light brown spots and the cook remaining chips, if any, for one more minute. Repeat with the remaining slices using the same parchment. Cool completely before storing in an airtight container.

OVEN INSTRUCTIONS:
Preheat the oven to 450 degrees F.
Line a baking sheet with parchment paper. Place the zucchini atop the parchment in a single layer, then mist with cooking spray.
Bake for 10 minutes, flip, then bake for another 10 minutes, or until the chips have reached the desired crispiness.
For crispier chips, use a wire rack instead of parchment.

Serving Size: Makes 4 servings, approximately 20 chips per serving.

    Another failed veggie chip experience for me. I'm sure it's not the recipe but my execution.. but they either come out still soggy or burnt to a crisp. I even started a fire in the microwave! Yep, I'm awesome. Though the soggy ones were tasty :P - 10/8/12

    I put them on the paper bags and into the microwave and paper GOT FIRE!!!!!! Taset was aweful, texture mushy. They went straight to the trash. - 1/21/13

    I loved the idea and liked the flavor, but I couldn't get the chips to crisp up without burning them black. I don't own a dehydrator, but might try them in the oven to see if that's any better. - 1/18/13

    I was going to try this until I read the reviews..maybe this should be removed as one lady said it started a FIRE in her microwave. I think that might be appropriate. - 9/1/13

    On Mother Earth web site there are directions on how to build a cardboard box dehydrator that is really easy. I plan on trying the zucchini chips in that. Very low cost. - 6/26/13

    The recipe doesn't say anything about microwaving them on paper bags! It says to use parchment paper. Those aren't the same thing. Don't blame the recipe if you didn't follow the directions... - 8/12/14

    Great. I have a Pampered Chef chip maker. I cooked for four - five minutes the first time. About two minutes after the rest time. Most were crispy and the ones that were not were still tasty. - 9/1/13

    I did this with kale, but in the oven. It worked fine on an oven tray because the bits of kale leaf don't/won't lie flat.
    I didn't enjoy at all, but DH did.
    So I'll be back to try this method of cooking in the m'wave very soon (though not with kale or other floppy leaves).

    .tI fix these chips all the time. Slice thin, sprinkle granulated garlic, little salt, pepper, Italian spice, spray olive oil, bake in 400 degree oven for 30 minutes. Sometimes I turn over after 20 minutes or so. If I remember. Special treat, sprinkle Feta cheese after baking. - 10/19/15

    These turned out great for me! The only thing I have to say is don't season the chips until after they have cooked otherwise you might have WAY to much seasoning as the zucchini will shrink. (I learned that the hard way :) Also check them every once and a while to make sure they don't burn. - 7/13/15

    I make zucchini chips all the time, either in my dehydrator or on a microwaveble chip maker. I usually sprinkle with garlic and basil before drying. They are delicious but they only hold their crunch for a day or two, so these are not ideal for long term storage. - 9/1/13

    Horrible don't waste your time and your zucchini! That picture is deceiving. Those look coated and deep fried. My burned in the oven and in the microwave. The pepper was horrible too.     I just did some yummy zucchini chips in my dehydrator--I thin sliced my zucchini and soaked them in a little water seasoned with seasoning salt (you could experiment with flavors). I sprayed my trays w/PAM-they were very tasty--did soften up in storage, but think that might have been from the PAM - 9/1/13

    OH my gosh! That's brilliant! I will have to use my oven and kinda bake them. Don't have a dehydrator...or paper bags...or parchment paper, but I do have an oven and two zucchinis that have to be cooked. I'm sure if I slice them thin, we can do something similar.     I used a cookie sheet, parchment paper, and a very low oven. first batch was too thick and mushy. I adjusted to a thinner slice and they were much better. - 9/1/13

    I'm going to try and toss zucchini in a tsp-Tbsp of cornstarch, spray with cooking spray and try this. Will post results. I do it with sweet potato "fries" to get crisp in oven.... - 3/19/13
