Introduction

Number of Servings: 6

Ingredients

    30 mushrooms
    1/4 cup chicken broth
    1 tbsp sherry
    1 tbsp butter
    1 tsp canola oil
    1/2 lb ground veal
    1 tbsp shallot
    2 tbsp soy sauce
    2 tbsp butter

Directions

In a saucepan combined chicken broth, sherry and 1 tbsp of butter.
Add mushrooms, simmer for three minutes.
Remove caps, drain and cool on paper towels.
Keep the juice aside.
Heat oil and add ground veal.
Cook until well done.
Remove from heat.
Add shallots, soy sauce, two tbsp melted butter and two tbsp of reserved juice.
Stuff each mushroom cap with mixture.
Place in a shallow oven proof dish.
Bake at 375*F for 20 min.
Serve warm.

    My husband loved the taste of the mushrooms...so did I, however I found them a pain to make. Perhaps it was my mood today. The veal kept hopping out of the mushrooms.....I had little patience for it. Although, I would make them again. A recipe I might make 3-4 times a year. - 7/19/08

    I will try it, but will probably switch to ground turkey or lean beef - will omit the butter and find an alternate, maybe margarine or oil. Someone said it was bland, add a little garlic or onion - fresh or powder - to spice it up a little.... - 8/1/11

    We could not find veal, made with ground turkey. A little bit bland, but good. I sprinkled grated parmesan on top. Served with roasted asparagus. I would make it again. - 4/17/11

    Recipe sounds good I like stuffed but have never tried any kind of meat in filling I usually use combo of breadcrumbs&grated cheese as filling. - 4/16/11

    I only had mushroom pieces on hand, so I made the dish with mushrooms included but not stuffed. I served it all over barley. The family raved about it. - 12/19/08
