Ingredients

    3 lb Bottom Round Roast (All extraneous fat removed)
    1 tbsp Olive Oil
    1 Large White Onion Cut into 1/4's
    6 Large Cloves Of Garlic Sliced in 1/2
    1/4 cup Red Wine Vinegar
    2-3 cups No Salt Beef Broth
    1 tsp Johnnys Garlic Spread
    1 tsp Fish and Game Spice
    1 tsp Black Pepper
    6 medium carrots (Optional)
    1 large sized Sweet Potato (Optional)

Directions

1) In a frying pan brown the roast on all sides to seal in juices. You can also caramelize the onions also to give more flavour.

2) Prepare the pressure cooker by preheating then add 1 tbsp of olive oil, then the browned roast. Sprinkle the pepper, Garlic Spread, and Fish and Game spices onto the roast. Add the Beef Broth and the 1/4 cup Red Wine Vinegar.

3) Add the vegetables and onion and garlic. Put lid on cooker. Wait until the cooker reaches maximum pressure then time for 20 minutes.

4) When pressure returns to normal open cooker and enjoy.

Serving Size: makes about 10 servings

    I made this tonight and followed this recipe only I added a couple of potatoes instead of sweet potatoes and I didn't have any garlic spread so I made my own. Although I am new to pressure cooking and this was the first meal I made, it came out fantastic! I will definitely make this again. - 12/15/15

    Cannot find Fish & Game spice; can you suggest a substitute (or the spices to sub?) Also, cannot find that brand of garlic spread, so going to sub Lawry's. - 11/6/18
