Number of Servings: 10

Ingredients

    Approx. 8 ounces- Boneless, skinless chicken breast

    1 egg

    Seasoning:
    2 cups (gluten free) corn flakes, crushed
    1 tbsp parmesan cheese
    1 tbsp poultry seasoning

Directions

Preheat oven to 400F

Cut chicken breasts into thin strips (approx 8-10)
In bowl mix seasoning ingrediants
Break egg and place in shallow, wide dish

Dip chicken strip in egg, and then in the seasoning mix (repeat until strip is covered by seasoning) and repeat with each strip

Place chicken strips on lightly greaced pan or cookie sheet. Place in oven for 30-40 minutes. Cooking times vary based on the size of the chicken strips.

Each strip will be approx. 45 calories

    I love this ! Instead of cornflakes I use Gluten Free CHEX and to spice things up I also use McCORMICKS PERFECT PINCH CARRIBEAN JERK ! This stuff is awesome and my mom even likes it! I make this at least 3x a week!!! - 7/27/10

    My son has celiac and this recipe is absolutely fabulous. I've used it on chicken, fish, and it is also good on top of baked mac and cheese(GF) minus the egg. WONDERFUL - 3/5/08
