Ingredients

    Cake:
    1 egg
    2 tablespoons mashed banana
    1 baby carrot, shredded
    2 tablespoons almond flour
    2 teaspoons stevia
    1 tablespoon Greek yogurt
    1 teaspoon pumpkin pie spice
    a pinch of baking powder

    Cream Cheese Frosting:
    1/8 cup tofu
    1/4 cup Tofutti cream cheese
    1/4 teaspoon vanilla extract
    1 teaspoon stevia


Tips

If you'd rather not use a microwave, you can bake this cake in an oven for 7-10 minutes at 350 degrees. Watch recipe creator Cassey Ho demonstrate how quick and easy it is to make this recipe!


Directions

1. Mix all cake ingredients in a mug
2. Microwave for 1-2 minutes
3. Remove cake from mug and chill in freezer while you make the frosting
4. Blend all of the frosting ingredients together until smooth
5. Slice cake in half, add frosting inside, on top and garnish with extra carrot shreds, walnuts and cinnamon

    faster and easier would be the 3-2-1 cake, take an Angel Food Cake Mix and a Carrot Cake Mix (one has to be Angel Food) mix together, take 3 tbs of the combined mix, 2 tbs of water, mix in a mug, place in the microwave for 1 minute. add whatever topping you want. rest of mix in airtight container - 7/9/14

    This cake is delicious and so easy and quick to make. You only need 1 teaspoon of stevia and it is sweet enough. I used light cream cheese with stevia for filling. You could use jam or any other filling you like if you don't like tofu. I think I will throw a few raisins in next time. Yummy. - 10/4/13

    We made this using Splenda and more carrot.I left out the baking powder since I didn't have it and it was still delish. I also used cream cheese for the icing as we are not lactose intolerant. ALSO a great tip is to lightly oil the mug first. So much easier to clean. - 12/11/13

    The recipe was supposed to make TWO servings and it looked she was going to eat the whole mugful of cake at one seating which would put the calories at 337 - almost the same as the storebought one she was talking about. Not much saving there!

    Just tried this. Verdict? As listed, meh. The cake part is great, but I couldn't find tofutti cream cheese, so I substituted vegan cream cheese, which seemed very salty. Would like to make this again using light cream cheese and more stevia. - 7/17/14

    this I will definitely try .....and adapt with different flours and tweak some other ingredients, too. I've had those cakes in a mug and it's a great way to have portion control. Cuz otherwise I might eat half a pan cake in a day. - 7/31/20

    This was better than expected it to be given the modifications made: regular sugar for stevia; allspice instead of pumpkin spice; regular cream cheese vs tofutti; and yogurt instead of tofu. It's great when a recipe can stand up to a few modifications. - 1/26/18

    I won't be trying this one. A small piece of the banana may be cheap but what about the large part that doesn't go in the cake. The same can be said for most of the ingredients. The dance with the hair flying is cute but at least one hair will be in the cake. Not a pleasant image for the cake. - 7/9/14
