Ingredients

    1-1/2 cups whole wheat flour
    Â― cup honey
    1-1/4 teaspoons baking powder
    1/2 teaspoon baking soda
    1 teaspoon ground cinnamon
    2 egg whites
    1 cup banana, mashed
    1/4 cup applesauce

Directions

Preheat oven to 350-degrees. Lightly grease a 6 cup muffin pan. In a large bowl, stir together flour, baking powder, baking soda and cinnamon. Add egg whites,honey, bananas and applesauce; stir just until combined. Pour batter into prepared pan.
Bake in preheated oven for 30 to 40 minutes, until a toothpick inserted into center of a muffin comes out clean. Turn out onto wire rack and allow to cool

    This is so yummy and they are so moist! I made 12 smaller muffins and split the recipe in that mannor. What a perfect snack for work.

    I also used 1 egg instead of 2 egg whites.

    I only had one banana when I made this recipe but even so, it's still a tasty recipe. I can really taste the cinnamon and honey. I found that there was enough batter for 9 muffins rather than 6. I have a standard size muffin pan though. - 6/22/08

    these look good! I'll have to try them sometime! If you use unsweetend applesauce (no, it doesn't use artificial sweeteners, it's just applesauce with nothing added), that would lower the calorie count! - 6/9/08
