Introduction
Based on a recipe from a superb low carb cook, I've "Texanized" the original. Have it plain OR garnish with your choice of salsa, sour cream (or Greek yogurt), chopped pickled/fresh jalapeños, chopped tomatoes, sliced/chopped avocados. The almond flour is really optional, but included in the nutritional statistics. The ricotta cheese blends in so well, you won't know it's there -- but adds some wonderful protein to the stats. 1 c ricotta cheese (I used part-skim.)
1 c 2% Mexican-blend cheese, split into 3/4 c and 1/4 c (I used Kraft.)
3/4 c chopped fresh green pepper, red pepper, and onion (I used approximately 1/4 c each and I also used pre-cut veges to make the prep go even faster.)
