Ingredients

    1 Whole Turkey (12 pounds)3/4 cup olive oil2 tablespoons garlic powder2 teaspoons dried basil1 teaspoon ground sage1 teaspoon salt1/2 teaspoon black pepper2 cups water

Directions

1. Preheat oven to 325 degrees F (165 degrees C). Clean turkey and place into a roasting pan with a lid.

2. In a small bowl, combine olive oil, garlic powder, dried basil, ground sage, salt and black pepper. Using a basting brush apply the mixture to the outside of the uncooked turkey. Pour water into the bottom of the pan and cover with the lid.

3. Bake for 3 to 3.5 hours or until the internal temperature of the thickest part of the thigh measures 180 degrees F (82 degrees C).

4. Remove bird from oven and allow to stand for about 30 minutes before carving.

Makes 16 servings.

    Used herbs & spices suggested. Baked 14 lb. turkey in roasting bag in 2.5 hours at 350. Was golden, very moist, done throughout, & delicious. Stuffed turkey with dried apricots, raisins, & fuji apples. Used juice for some of the best gravy ever. Thanx much for the recipe. Will for sure use again. - 11/24/08

    Try putting a peeled onion cut in half and an apple inside the turkey before roasting: this adds to the moistness and flavour. - 2/6/09

    I have been roasting my turkey this way (covered & lower temp) for years - minus the oil & spices.

    Try "flipping the bird" onto it's breastbone for half the time - then return it to the normal position for the remainder of the time for moist and juicy white meat!

    I used this recipe for Thanksgiving and instead of water I used chicken broth, used fresh herbs and cooked in a cooking bag. Was the best Turkey that I have ever had. Spectacular Recipe. - 11/29/07

    This is a great combination of seasonings for turkey. I also add rosemary, onion cut in quarters and an apple in quarters to the cavity. Adds flavor and moisture! if stuffing is a must, cook on stove or bake outside the bird. it will be easier to control and won't soak up all the turkey fat - 11/19/08

    Instead of the garlic powder, use crushed garlic cloves . It cuts down on the sodium. Also, you can add a whole onion into the cavity of the turkey. For a little variety, substitute 1 cup orange juice for 1 cup of the water. The larger the turkey the more you get for your money 15 lbs. plus - 5/24/08

    This was awesome. My husband doesn't really care for turkey but he even enjoyed it. It was very moist. I don't have a lid for my roaster so I just covered it losely with tinfoil. - 7/6/09

    The flavors of the herbs on this were wonderful, and made great "skinny" gravy. The meat was moist. I also removed the lid the last half-hour to brown it some. Looking forward to a sandwich on whole-wheat bread tomorrow! - 12/25/08

    This turned out absolutely beautiful yesterday! Thank you so much for sharing. And, btw, unless you eat the skin, the olive oil does not actually add fat to the bird but it does make the seasonings adhere and flavor the bird better during roasting...just an FYI ;) - 11/23/07

    Never use a "prebasted" turkey. They are soaked in salt. Always use fresh turkeys. The taste is better and the sodium is way lower - 5/21/21
