Introduction

Ingredients

    6 medium potatoes (@600g) cooked and sliced 1/4" thick
    2 tblsp 40% margarine, melted
    1/4 cup onion chopped
    2 cloves garlic minced
    8 1/2 oz (250 grams) extra lean ground beef
    10 oz pkt (@250 grams) frozen spinach thawed and squeezed dry
    1/3 cup 1% cottage cheese
    1/3 cup low fat Chedder or Colby cheese
    grated
    1 large egg beaten
    1/4 tsp salt
    1/4 tsp black pepper ground

Directions

Heat oven to 350deg and grease an 8' square baking pan.
Place half of the sliced potatoes overlapping in baking pan and pour over half of the margarine.
Cook onions and garlic until soft , add ground beef and cook until no longer pink. Drain off any fat, take off stove and cool slightly.
Add cottage cheese, spinach, egg, salt and pepper stirring to mix well.
Spread mixture over potato slices , cover with remaining potato slices, drizzle over remaining margarine and top with grated cheese.
Cook for approx 30 minutes or until hot, and stand for 5 minutes before serving.

    Very Good
    Used spicy ground venison, nixed bottom layer of pots, only used 1 tablespoon butter on top of potatoes and it was tasty! Wasn't dry at all. Will leave out cottage cheese next time, it didn't do anything technical nor taste wise. - 2/21/13

    The adults all enjoyed this is easy and tasty dish. I did use ground turkey and extra spinach. Very good and easy! Will be making this again. - 10/16/08

    Very tasty!! I used canned salmon in place of the beef and added extra onions as well. My fam loved it! Also, I didn't have cottage cheese so I added a bit of hard parmesan on top of the potatoes. Nice!! Oh, also I made it ahead and just warmed it up when dinner time came around. - 7/30/08

    My husband absolutely loved it. I used instant mashed potatoes on the top only and it was great! I put in a little extra FF cottage cheese and used a little FF sour cream on my serving. A perfect way to get my spinach! - 7/22/08

    Very Good
    I liked this casserole a lot but I did make some changes. I cut out the butter. However, I thought it left it a little dry. I also put a lot of extra sauted onions and about 3/4 of the potatoes. To make up for the dryness, I topped my serving with low fat sour cream and LOVED it!!!!! - 5/23/08

    Incredible!
    We LOVED this thanks for the great recipe. Although I did use Ground Turkey instead of beef, and no butter. Also i followed the previous posters advice and just put the potatos on top. It was still very tasty. My boyfried who hates spinach absolutly loved it! - 5/19/08

    Very Good
    Very good and easy casserole to make. My famiy enjoyed it. I didn't use the margarine and didn't miss it. I think next time I would only layer potatoes on top. I found it too filling to have potatoes on the top and the bottom. I love watching my family eat spinach and enjoying it! - 4/17/08
