Ingredients

    1 Flour or Whole Wheat Tortilla
    2-4 slices of fresh smoked turkey breast (not deli style slices)
    2 pieces of artichoke (canned), chopped
    2 pieces of roasted red pepper, chopped
    1/4 cup Monterey Jack Cheese (or any preferred meltable cheese)
    1 Tbsp. chopped red onion (optional)
    Salsa for dipping (optional)


Directions

Place turkey slices on one half of the tortilla.
Layer remaining ingredients (I place cheese last, on top of the other ingredients) on top of the turkey.
Fold tortilla in half.
Heat in nonstick pan on medium heat, flipping once or twice, until heated through and cheese is melted; tortilla will be slightly browned.
Cut diagonally into 6 triangular pieces.
Dip in salsa if desired.

Makes 6 triangular pieces, which can be 1 large or 2 small servings.

    The calorie count states 1/2 C of cheese but the directions state 1/4 C so the calories are off by over 100 if you go by the instructions...just an fyi :) - 5/10/13
