Ingredients

    4 medium potatoes cubed
    1 can diced tomatoes
    1 cup frozen green peas
    1 chopped medium onion
    2 tbsp olive oil
    1 tbsp chopped cilantro (fresh)
    1/2 tsp chili powder
    1 tsp curry powder
    1/2 tsp salt
    1 cup water

Directions

sautee onions in olive oil. Add ginger and sautee on low heat for a minute, then dd the curry powder and chili powder. Add the potatoes and 1/2 tsp salt. Mix well, then add 1 cup of water. Cook on medium heat until potatoes are tender (15-25 minutes). Add tomatoes and peas and cook until peas are tender (5-6 minutes). Taste for seasoning and adjust if desired. Remove from heat and add chopped cilantro.

    This was delicious and easy. I didn't see the ginger listed in the ingredients list though. I added a little ginger, 1/2 a tsp of turmeric and some hot chili flakes. I'll be making this again soon. - 12/17/08

    Great recipe. Used it as a side dish with tandoori chicken and used hot curry to make it spicier. - 8/21/12
