Ingredients

    * Mushrooms, fresh, 150 grams
    * Milk, 2%, 1 cup
    * Corn Starch, 0.020 cup (1 tsp)
    * Garlic powder, .5 grams (to taste)
    * Salt, .1 tsp (a pinch) - (to taste)
    * Parmesan Cheese, grated, 1 tbsp

Directions

Super simple to make and filling too.

This whole recipe hinges on getting the mushrooms to saute' and begin to brown a little. Deglazing the pan with the small amount of water makes a mushroom broth, then adding in the milk mixture makes it a tasty soup.

Process-

In a sauce pot spray the bottom with Pam butter flavor spray, Let the pan get hot, then put the mushrooms in and sauté' on high till golden on the sides. Salt lightly, add in 2 tbs water, let simmer and reduce down for a few minutes. When half of the water is evaporated - mix cornstarch, with the milk, garlic and extra salt (don't over do it). Then pour mixture into the mushrooms, still on high. Keep stirring until the soup thickens. ... Wa-La... Soup. Just pour in a bowl then top with the grated Parmesan Cheese.

    I loved this AS Is. The calorie count was excellent for a very filling Lunch. Sometimes you just want to enjoy a lot of something instead of a little something. This filled the bill for my needs yesterday. At 189 calories for the whole thing, I was full happy and satisfied with the taste. Thank You! - 7/6/10

    Very good!!! I was making another recipe that called for canned and didn't have any ~ this was perfect!!!!! Also added onion and garlic! and no salt... since recipe had plenty of other ingredients! YUM! - 2/1/10

    I used butter to sautee onions and mushrooms, skim milk and fat free half and half along with spices that we like - Italian spice mixture with finely chopped fresh parsley~ delicious! - 4/10/09

    My daughter also loved it.. I made this to make use of the mushrooms that I had that were otherwise going to waste.. Good idea. We each had half a saving as a starter to our main meal. It was wonderfull and did not set me off my calory goals at all. - 2/11/11

    This was great I changed it a little and added garlic and onions before the mushrooms half way through I added some dried rosemary. I love mushroom soup and now I can make it at home - 9/29/10

    This was good but originally too watery, so I had to add 2 TBSP light sour cream and a weeee bit more corn starch...maybe because I used 1% milk instead of 2%?? - 6/9/10

    Made for lunch today. Saute some onion and a clove of garlic with the mushroom. Didn't have any parm so added a couple tbsp FF sour cream. Will be making again. Very easy and delicious. - 1/29/10

    This sure beats the "diet blues"! It feels as good as it tastes to eat. You just wouldn't know you are eating low fat low calorie food. And such a hearty serving too! - 9/16/08
