This salad is so savory and fresh, makes a great entrance or side dish, and no chilean celebration could be complete without it.

Ingredients

    4 cups finely sliced onion
    4 cups diced peeled tomatoes
    1 tsp. salt (for spice)
    1 tbsp salt (for "amortiguar" the onion)
    pepper
    1 tbsp of oil (mild flavored)
    lemon juice to taste (optional)
    1/2 cup finely chopped fresh coriander (cilantro)

Directions

Put onions in a bowl. Cover with cold water with a tbsp of salt and leave for an hour.

Drain well. Mix with the tomatoes and coriander on a large platter. Sprinkle with salt and pepper. Pour on oil and lemon juice. Mix and serve .
