Ingredients

    2 pounds asparagus
    2 Tbsp Olive Oil
    1/4 each Itailian seasoning ( add calories to recipe depending on what you use) and fresh ground pepper.
    1 oz from a piece of Asiago cheese

Directions

1. Heat oven to 400 degrees
2. Put asparagus on backing sheet, drizzle with oil and seasonings. Toss to coat evenly, spead in one layer.
3. Reat 15 minutes or until tender and tips are just browning.
4. With a vegetable peeler, shave asiago chese onto hot asparagus, Toss gently and serve.

    Made this as a side to the Broiled Parmesan Tilapia recipe. Used parm instead b/c I had it. Cut the spears in bite sizes & put them in a bowl & coated w/garlic grapeseed oil & rosemary blend seasoning. Spread them out on the baking sheet. Put them back in bowl w/lid to keep warm while cooking fish. - 2/17/10

    Very yummy! Had it tonight with steak...mmm. Only suggestion, depending on the oven it might need to be in for a little bit longer than 15 min. Mine wasnt super soft like im used to. But otherwise, excellent! - 1/5/09

    My brother got my husband and I hooked on eating asaragus this way, and it's fantastic! We grill ours on the BBQ, and I love it!
    We just use salf and fresh ground pepper, let it sit for a bit, and then toss it onto the BBQ - we usually grill them for about 8 minutes, then sprinkle the cheese on.

    I love roasted asparagus, but spray with a little olive oil and sprinkle with sea salt and ground pepper, can't go wrong. Also do the same thing with cubes of butternut squash and just roast longer, about 45 minues, turning occasionally. Sweet and wonderful - 2/7/09

    Ive made a version of this on stovetop: about same amt of olive oil, a little more garlic, and 'roasted' them until seared, nearly charred on one side. I cant do dairy so I didn't add, but I LOVE asiago ! ( I miss cheese *sniff*) - 1/11/09
