This delicious dip comes from a recipe I tweaked to make it lower in fat and calories. My family gobbled this up at a recent holiday party! This delicious dip comes from a recipe I tweaked to make it lower in fat and calories. My family gobbled this up at a recent holiday party!

Ingredients

    1 tbsp. butter or margarine
    1 large sweet onion, finely diced
    1/3 cup fat-free mayonnaise
    1/2 cup reduced-fat shredded cheddar cheese
    1/4 cup shredded Parmesan cheese
    1 tbsp fresh parsley, chopped
    1/2 tsp hot pepper sauce

Directions

Preheat oven to 350 F.
Melt margarine in a large skillet over low heat. Add onions and turn up heat to medium. Cook 5 - 7 minutes until onions are golden brown, stirring occasionally. Let cool slightly.
Mix mayo, cheeses, parsley, and hot pepper sauce in a bowl. Stir in onions. Spread into a baking dish.
Bake at 350 F for about 25-30 minutes or until heated through.
Serve with crackers of choice.
Makes approximately 8 two-tablespoon servings.

    You could use a cheese made from rice or soy milk perhaps, but I don't know what it would taste like without the dairy milk cheese or with rice/soy cheese. Without the cheese I would imagine this would be too thin.

    Made this for a carry-in at work. Some of us are eating healthy, some not so much! Everyone liked it! I used Smartbeat mayo, and like another person, I tripled the recipe, but not the onion. It was perfect. I would use a tad less hot sauce next time, tho. Otherwise, thanks for a great recipe! - 3/17/11
