Introduction

I combined several ideas from other people's recipes I combined several ideas from other people's recipes
Number of Servings: 8

Ingredients

    2 - 2.5 pounds of carrots (I used baby carrots)
    1 rib celery, chopped (approx 1 cup)
    1 cup chopped onion
    2 cans Swanson 99% fat free Chicken Broth

Directions

Combine all ingredients in large soup pot. Cook approximately an hour until veggies are soft. Mash with potato masher or cool and blend until smooth.

I chopped up a cooked chicken breast and served the soup over it. This wasn't included in the calorie count.

    Oh my goodness, I just made a big batch of this for the very first time for a function tomorrow and it is delicious! I cooked it all in the crockpot, added 3 bay leaves, then pureed everything, minus the bay leaves. I think I am going to get some sour cream to put on top, it is delicious! - 10/30/10

    what i do is steam the veggies first and them blend/mash them and then cook them in the broth. - 10/22/10
