Number of Servings: 7

Ingredients

    2 T. Extra Virgin Olive Oil
    2 Large White onions
    1 and 1/2 pounds chicken breast, turkey breast or tofu, diced
    1 large carrot, finely shredded
    2 large garlic cloves, minced
    1 jalapeno pepper, minced
    1 tsp dried thyme or oregano or two tsp, minced, fresh
    8 cups of fat free natural chicken broth
    1(15 oz) can of black beans, drained
    2 packed cups of fresh baby spinach leaves
    1 large tomato, finely diced
    salt and pepper to taste
    7 T. grated parmesan cheese, optional
    lemon wedges, optional

Directions

Heat oil in a large stockpot over medium heat. Add onions, stirring occasionally, for 10 minutes. Add chicken stirring occasionally for 5 minutes more, or until chicken is cooked through and onions are lightly browned. Add carrot, garlic, jalapeno and thyme; cook another 2 minutes. Stir in broth and increase heat to high. Bring to a boil. Add beans, spinach and tomato. Bring back to boil, Then turn off the heat. Add salt and pepper to taste. Sprinkle each serving with one T. Parmesan cheese. If desired, enjoy with a squirt of lemon.

    This soup is so good! I made a big batch of it for myself when I started my diet, but only had one bowl because my son and his girlfriend ate it all up - they loved it! They are both very slender and were surprised it was a DIET soup. So whether dieting or not, this is a tasty meal! - 4/10/10

    Incredible!
    Substitue a 15 oz. can of crushed tomatoes for the diced. It infuses the entire pot of soup with a richer tomato flavor which, combined with the spinach & spices, gives the soup a Florentine flavor. Doesn't significantly change the caloric or fat content, but does increase the sodium a bit. - 1/12/14

    Made the soup was super surprised at the volume of onions as well and they never browned not even lightly that aside this is the best soup I have ever tasted however I dont get the whole diet part. Is there a particular plan to follow with eating this delicious soup? - 9/15/10
