Introduction

I adapted a recipe from Bob's Red Mill Stone Ground White Rice Flour for White Rice Muffins. They are pretty good for my first attempt at a gluten free muffin. Number of Servings: 12

Ingredients

    1 Egg
    1/4 cup 2% Milk (you can use any liquid according to the recipe.)
    2 Tbsp. Sugar
    2 Tbsp Canola Oil
    1 cup White Rice Flour
    2 tsp Baking Powder
    1/2 tsp Salt
    1-2 Mashed Overripe Bananas

Directions

Preheat oven to 425 degrees. Lightly grease a 12 cup muffin tin. Mix all ingredients together in a mixing bowl. Bake for 15-17 minutes. Allow muffins to cool 5 minutes before removing from the tin.

    SUB: NF yogurt 4 butter, 4 sugar -> dried apricots or dates rehydrated in boiling water.

    yes Geogirl! Add the vanilla indeed. Plus omit the butter and add non-fat youghurt instead. Lemon zest & juice [or use oranges.] Fresh ginger, cardamom & nutmeg too. I swap out the sugar and add dried apricots that have been rehydrated in boiling water. Could use dates instead. - 6/3/09

    Incredible!
    A very adaptable recipe and a much needed welcome treat for some of us that can't eat ordinary muffins and sweets and not too high in calories either. Will make it again - 4/3/09

    Not bad, I added another banana and added a 1/2 tsp vanilla and a 1/2 tsp of cinnamon for added taste. Would make again. - 3/21/09
