Introduction

Ingredients

    3.5 pounds reduced sodium corned beef
    2 cups water
    3 cloves garlic minced.
    1 Tbsp black pepper
    1/2 small head cabbage coarsely chopped
    20 baby carrots
    9 small red potatoes cut in half
    1 1/2 dozen brussels sprouts

Directions

Preheat oven to 325 degrees. Place corned beef, fat side up, in a large baking pan. Add water and garlic. Sprinkle corned beef with seasoning packet and pepper. Cover and cook for 1 1/2 hours. Add vegetables to pan around corned beef (add more water if necessary) and cook another 2 1/2 hours or until beef is tender and vegetables are cooked.
