Number of Servings: 1

Ingredients

    3/4 cup of Whole Wheat Pasta (cooked)
    1/4 cup of Fresh Mushrooms (slices or chopped)
    6 leaves of Fresh Spinach (chopped)
    1/2 of a Plum Tomato
    1/4 cup of Feta Cheese (crumbled)
    1/4 tbsp of Extra Virgin Olive Oil
    A pinch of Garlic Powder

Directions

Cook pasta as directed, al dente.

Meanwhile in a sauce pan heat oil over low heat.
Add mushrooms and tomato and cook till heated.

When pasta is finished, drain and return to pan.
Mix mushrooms, oil and tomatoes into pasta.
Add feta, spinach and a pinch of garlic powder to the pasta mixture.
Stir and enjoy.

    I used green peppers instead of spinach as my hubby won't touch spinach with a ten foot pole. I listened to the suggestions here and used fresh garlic in my press and added thyme, basil, and oregano. It was delicious! - 1/23/12

    I made the mistake of having my burner on too high, the result was not so great. The tomatoes became a sauce, it wasn't the prettiest looking (boyfriend wouldn't eat it) but it still taked okay. I also added fresh garlic from a garlic press to add flavor instead of the garlic powder. - 1/8/10

    This was wonderful! I left out the mushrooms and it was still fabulous. For work I measured out the pasta, raw spinach, tomatoes and feta cheese and microwaved for two minutes......awesome! I love simple but great recipes, thanks! - 4/28/09
