Really light in calories and huge in flavor. We have made this recipe with Tilapia loins, fillets, and with Whiting fish. All are excellent. It is a quick and easy recipe to prepare. Ingredients

    4 oz Tilapia Loins or fillets
    3/4 tsp extra virgin olive oil
    1 tbsp salsa
    1 tsp honey
    1 tsp mustard, any flavor

Directions

Preheat oven to 450F. Spread olive oil on bottom of casserole dish. Place fish in dish, season with lemon pepper and garlic, bake uncovered 10 minutes. Combine salsa, honey, and mustard in a small bowl. When fish is done cooking, drain liquid from casserole dish and spoon salsa mixture on top. Return to oven and cook for 2-5 more minutes to heat sauce. Serves 1. Can easily be doubled or more.

    wow..this was delicious, I will definately make this again. i lke that the ingredients were all staples in my pantry. Very QUICK and Easy to make. I used spray pam & served the Tilapia on a 1 cup serving of long grain brown rice with crisp steamed brocoli and baby carrots on the side. Very filling - 6/20/12

    this was VERY yummy and VERY easy. Keep in mind that you can use a variety of mustards- i have some northern wisconsin cranberry mustard that I can't wait to try: add a bit more sweetness to the spice. Same goes for salsa. Different types of salsa add different combos of flavor! - 7/29/09

    This tasted great! It was my first attempt to cook any type of fish and I was pleasantly surprised... I missread the recipe and had 4 fillets and only made the sauce as was written... was still pretty good... - 1/14/10

    My DD said, "eh, its ok". My DH said, "not for me". But i absolutely loved it!!! I used cooking spray instead of the olive oil though. Thanks for sharing - 8/21/09

    This is a great recipe as long as you stick with tilapia. I tried it with flounder once and wasnt pleased, but love it when I make it with tilapia :) - 7/7/09
