Ingredients

1 3/4 cups all-purpose flour
3/4 cup white sugar
2 tsp baking powder
1/4 tsp salt
2 egg whites
1 cup nonfat milk
1/4 cup unsweetened applesauce
2 TBSP finely shredded lemon peel
1 TBSP lemon juice
1/2 cup slivered almonds or walnuts
Directions
Preheat oven to 350 degrees. Lightly spray an 8 by 4 by 2-inch loaf pan. In a medium bowl combine flour, sugar, baking powder, and salt. Make a well in the center of flour mixture and set aside.
In another medium mixing bowl combine the egg whites, milk, applesauce, lemon peel, and lemon juice. Add egg mixture all at once to flour mixture. Stir just until moistened...batter should be quite lumpy. Spoon batter into prepared pan. Sprinkle almonds or walnuts evenly over batter.
Bake for 50-55 minutes or until wooden toothpick inserted near center comes out clean.
Makes 1 load which is 16 slices :)

I made this last night (without nuts, because of allergies) and the flavor is good, but it turned out a little too dense and chewy for my preference. (It's possible I stirred the batter too much.) I made a second loaf and added some fresh raspberries, which was a really delightful addition. - 6/15/10
