Ingredients

    1 lb. ground turkey 93%
    1 can red enchilada sauce
    2 c. mozzarella cheese
    8 corn tortillas
    1 T. chili powder
    24 oz. chicken broth
    1/4 c. diced onion
    1 diced garlic clove
    1 t. salt
    3 T. flour

Directions

Brown the turkey over medium high.
In a saucepan sauté the diced onion and garlic on high heat until opaque. Add the chicken broth and bring to a boil.
In a bowl, mix the red enchilada sauce with the chili powder, salt and flour. Slowly add this to the broth in the saucepan and turn the heat down to low with thickened.
Add about a cup of sauce to the browned turkey and simmer for about fifteen minutes.
Spray the corn tortillas with Pam and fry in a pan on high heat.
Dip the cooked tortillas in the sauce and fill with about 2 tablespoons of meat. Roll and place in a quart dish.
Top with the cheese and cook at 350 for 20 minutes.

    11 g fat! 56 mg of Cholesterol! and almost 600 mg of salt! for one small enchilada. This is NOT a dieters best friend. Too unhealthy all the way around. Not, not, not a good thing - 8/20/10

    Made this with a lot less cheese, and there was a lot of sauce left over (it never got very thick) but it was really good and even the picky eaters in the family were happy! - 8/25/09

    This was absolutely delicious! I'm gluten intolerant, so I used gluten free enchilada sauce & gluten free flour. It has more fat, calories & sodium that my usual, but I ate healthier for breakfast & lunch so I could have 2 servings. It was a family event with everyone helping make it & clean up! - 1/19/21

    was really good. I don't know if it was just me, but these were a pain to make. I flt like I dirtied up 50 pans! lol But hubs loved them and had no clue it was turkey. I used whole wheat tortilla because that is what I had on hand and I think it kinda messed with the flavor a bit. Still I will make - 1/16/14
