Introduction

I love Subway's Veggie Delight, but sometimes I want a more meaty sandwich, sans the meat. I used to love Philly Cheese Steaks before going veg, and thought a thinly sliced portabella would substitute nicely. It did not disappoint!

Also, the nutritional information includes the marinade, most of which is drained off prior to cooking, so the sodium level is probably much lower.

Ingredients

    1/2 Whole Wheat Pita (6-1/2" dia)
    1 Portabella Mushrooms, stem removed and thinly sliced
    1 slice Provolone Cheese
    2 tbs chopped onions
    1/4 red pepper, thinly sliced
    1 tsp olive oil

    MARINADE
    Soy Sauce, 1 tsp
    Red Wine Vinegar, 1 tsp
    Vegetarian Worcestershire Sauce,1 tsp

Directions

Thinly slice portabella and vegetables.

Mix mushroom slices and marinade. Allow to sit for 2 minutes, then drain marinade. Don't go for too much longer or the mushrooms will be overpowered by the seasonings.

In skillet, saute onions and peppers until soft and slightly browned. Remove from skillet, placing off to the side.

Saute mushrooms in skillet until soft and brown.

In pita half, layer cheese, vegetables and mushrooms.

Place under broiler for 2-3 minutes until pita gets slightly crispy and the cheese melts.

Serve and enjoy!!

    Delicious! Just made this tonight for dinner.

    I used Bragg's Amino Acid instead of soy to cut down some of the sodium. Also, added in a little bit of crushed red pepper when I was sauteeing the onions and peppers for a little extra zing.

    I'm going to try a "meatball" sub with portabella next

    This would be a great recipe, but because I'm allergic to mushrooms, it doesn't work for me... I'd prefer to see a makeover that included the meat instead of the mushroom to really capture the essance of a philly cheesesteak! - 11/4/09

    This taste amazing. Love it!!! The recipe says chopped onion, but I think next time I'll use sliced onion and more of it. I think by the picture, it was intended for them to be sliced. - 11/3/09
