Ingredients

1 lb - chicken breast, skinless & boneless
1/2 - medium green bell pepper, chopped
1 - 8oz can - mandarin oranges, drained (reserve liquid for marinade)
1 tbsp - Ginger, ground
1 tsp - Salt
5 cloves - garlic (minced)
Marinade:
Juice reserved from drained Mandarin oranges above
1/2 cup - orange juice
2 tbsp - lite soy sauce
1 tsp - ginger, ground
1 clove - garlic (minced)
Directions
1) In a bowl, mix all ingredients listed for the Marinade. Set aside.
2) Season chicken breasts with salt & ground ginger & place them in a well greased 9X13 in. baking dish. Evenly spread minced garlic over the chicken breasts,then spread chopped bell pepper over chicken. Pour marinade over chicken & bell peppers, and finally top with mandarin oranges.
3) Cover lightly w/ foil & place in refrigerator for 2 hours.
4) Preheat oven to 350, place baking dish (with foil still on) in oven for 30 mins.
5) Revove all solid ingredients to a serving dish, and pour Marinade in to a saucepan. Cook over medium heat until sauce has thickened to a syrup like consistency (about 5 minutes). Pour sauce over chicken and serve. (goes very well with rice)
