Ingredients

    10 oz. package frozen spinach, thawed and drained
    2 cups lowfat cottage cheese
    1 cup lowfat cheddar cheese, grated
    2 tbsp onion,chopped
    4 egg whites

Directions

Mix all ingredients, pour into loaf pan sprayed with nonstick cooking spray and bake at 350 degrees for 45 minutes.
Slice and serve!

    It's not Stouffers' and it is a little watery - and I squeezed all the liqiud out of the spinach, next time I will drain the cottage cheese and maybe add a hint of garlic and powdered mustard or pepper. - 1/8/10

    Like LUCYG...I add nutmeg and black pepper and squeeze the spinach in paper towels to drain. I also arrange tomato slices on top before baking. - 5/5/08

    I added a bit of garlic powder and black pepper to mine before baking. I found it to be tasty, but a bit too salty. I did also find it a bit watery although I squeezed out the spinach. Next time I'll try draining the cottage cheese - maybe that'll help with both the salt and water. - 8/25/08

    This was really good & hubby liked too. I added grated nutmeg, black pepper & only a dash of salt. I squeezed my spinach, but next time I will squeeze even better. Could have baked it a few more mins. to get a little browner for more appeal. Will definitely make again! - 2/25/08

    Excelent, I can't get enough of it. I added more spinach and less cheese. This required longer baling time in a loaf pan.
    This will be a regular in meal plans!

    The directions should really call for chopping the spinach really fine, and pureeing the cottache cheese a bit. I found it lumpy, watery and not very appealing. - 6/14/08

    I've been making a similar recipe for years. I basically mix these ingredients and some sour cream into some mashed potatoes and bake. It goes over great at potlucks! - 5/5/08

    Very good. I added more onions than the recipe called for, and used fat free cheeses to make it even healthier. I also added in some cumin and some nutmeg for added flavor. Will definitely keep experimenting with because it's a great, hearty meal! - 9/3/07

    Used 3 whole eggs instead of egg whites and added a little curry powder, dry mustard, and black pepper. Definitely squeeze all water out of spinach. I used a pie plate so it cooked faster. Made a great healthy breakfast! - 9/17/16

    I have been making a very similar recipe for my family for years. It's how I got them to like spinach! In the past I used 3 whole eggs rather than eggwhites, and I have also used one egg and eggmates. I will also add any herbs and spices that I have on hand. - 1/19/14
