Ingredients

    1 lb potatoes (yukon gold is best)
    1 cup cauliflower
    1 parsnip
    1/2 cup chicken broth
    3 TBSP nonfat plain yogurt

Directions

makes eight 1/2 cup servings

boil all veg until fork tender, adding cauliflower towards end of cooking as it cooks much faster than other veg. mash w/ masher or electric mixer. blend in liquids. continue to blend until it is the consistency of "normal" mased potatoes.

    I absolutely love mashed potatoes and i use a recipe similar to this to cut the calories. I add minced garlic and dill to mine and I use fat free sour cream instead. To die for. - 2/15/10
