Introduction

Make your own sausage for a healthier alternative to prepared, store bought sausage! I cut out most of the salt called for in this recipe for a low-sodium alternative. If you don't have an hour to let the spices meld, that's ok. Let them meld for as long as possible before cooking. They're tasty either way. Enjoy!

Ingredients

    •1/2 to 3/4 Teaspoon Salt
    •1 Teaspoon Fennel Seed
    •1 Teaspoon Sage
    •1 Teaspoon Thyme
    •1 Teaspoon Pepper, White and/or Black
    •1/4 Teaspoon Garlic Powder
    •1/2 Teaspoon Onion Powder
    •1/4 Teaspoon Ground Nutmeg
    •Generous Pinch of Crushed Red Pepper

Directions

1. Combine spices together in small bowl.
2. Add to 1 lb of ground turkey, 93% lean.
3. Use potato masher, fork, or your hands to blend spices in to meat completely, usually 2-3 minutes of kneading or mashing.
4. Refrigerate for at least an hour for spices to blend completely. If you don't have that time, just leave the mixture on the counter for a few minutes while you're doing other things.
5. Form 8 balls of sausage of equal size.
6. Heat skillet on medium heat, spray with Pam just before adding sausage to cook.
7. Drop sausage balls into pan, flatten with a spatula.
8. Cook for 4-5 minutes, then flip, cooking for another 4-5 minutes until golden brown on each side and no longer pink in the middle.
9. Serve and enjoy! Makes 4-8 servings, depending on the addictiveness you find of these tasty sausage patties. Nutrition information is based on 1 patty.
10. You can freeze any leftovers and use them later--makes good breakfast sandwiches with an english muffin, egg beaters, and a slice of cheese!

    These are really good. For those that want to stick to traditional pork I recommend this recipe with center cut pork tenderloin. The change does not add as much fat as you would think. Just an option to look into. - 2/20/17

    This was a great recipe. Of course since I cook on impulse I didn't have sage or fennel. I substituted a1/2 tsp of homemade Italian seasoning and a 11/2 ttp of Pampered Chef applewood rub. The sausage had a smokey sweet flavor. - 3/22/16
