Ingredients

Mexican (or chili style) Ground Soy Meat
2 14oz Chili Style Stewed Tomatoes (I usually use the 19 oz cans cause I can't find 14 oz... not a big deal)
1 can Red Kidney Beans (drained)
1 can Beans (drained) - Black/White/Whatever you want - you pick
2 med Onions (chopped)
2 Garlic Cloves (chopped)
3 Portobello Mushrooms (coarsely cut)
1 Eggplant (cubed)
2 Carrots (chopped)
2 Celery Stick (chopped)
1 Zucchini (chopped)
3 tbspn Chili Powder
Directions
In a large pot, fry up all the veg in 2 tspn oil (only for 5 min or so) then add tomatoes, beans and chili powder. Stir it all up and simmer for 1 hour. Add the Soy meat and cook for another 1/2 hour.
All done... easy peasy!!! I sometimes add salt, pepper and maybe a bit more seasoning that we like (cayenne pepper, chili peppers, etc...) but don't make it too spicy... my mom doesn't like too spicy.
Serve with a big plate of buttered toast or french stick!
