It will taste a lot more authentic if you put in some actual raspberries, but that will make it unsuitable for induction so your choice! Ingredients

    2 T DaVinci SF Raspberry Syrup
    1 ounce organic cream cheese
    1/4 cup golden flaxmeal
    dash salt
    1/2 tsp. baking powder
    1 egg's worth of eggwhites (I like TJ's cagefree) or 1 organic egg (medium is best size)

Directions

Mix dry ingredients together thoroughly (I use a large measuring cup and just add other ingredients to the flax once I have measured it). In an oversized coffee cup, beat together egg, syrup & cream cheese. Mix in dry ingredients and put in microwave for 90 seconds. This will make a tall muffin. If you prefer a flatter muffin (more like a muffin top) use a small, shallow cereal bowl. Top with some whipped cream & more raspberry syrup if desired. For a really decadent version put a tablespoon of melted butter into the batter before cooking. Please comment if you make this recipe! Enjoy.
