Introduction

Ingredients

Saute over med-high heat:
2 T olive oil in a 3 qt. pot
1 medium onion, chopped
3 cloves garlic, pressed (or 3t. crushed garlic)
Add:
2 chicken breasts, chopped (1" dice)
Brown chicken over medium-high heat
Add to pot:
1 can zesty pinto beans, undrained
1 can kidney beans, drained
2 cans black beans, drained
1 can chopped tomatoes (mexican style if you like)
4 T fresh salsa (we like Reser's)
Spices to taste:
1t +/- ground cumin
1t +/- chili powder
1T or more chopped cilantro
1t +/- granular garlic
black pepper
Directions
Simmer 15 minutes. Makes 10 one cup servings.
We eat this with tortilla chips or over brown rice.
The kids like to add sour cream and shredded cheddar cheese, but I rarely have that many calories left at dinnertime, and I enjoy it without the dairy add-ons.
