Ingredients
* Onions, raw, 1/2 large, chopped
* Garlic, 1-2 cloves, minced
* Salt, 1/2 tsp
* *Cumin seed, ground, 1/2 tsp
* Cinnamon, ground, 1/8 tsp
* Orange Juice, 1/2 cup
* *Lemon Juice, 1 Tbsp
* Tomato Paste, 1 Tbsp
* *Hot Chili Peppers, fresh or jarred, chopped, to taste
* Beans, black, 1 can, rinsed and drained
Directions
Heat large skillet or saucepan over medium heat. Spray with non-stick cooking spray. Add onion, cook for 5 minutes, stirring occasionally.
Add garlic, salt, cumin and cinnamon; continue cooking for 3 more minutes.
Add orange and lemon juices, tomato paste, and hot peppers; simmer uncovered for 5 minutes.
Add beans; bring to a boil. Reduce heat; simmer, uncovered 5 minutes, stirring occasionally.
Makes 4-1/2 cup servings. I will make this for dinner sometimes and eat 2 servings which still is less than 260 calories. Can garnish with lemon and orange zest. Also can garnish with fresh grated parmesan cheese, though that isn't included in the calorie count.
You can easily substitute other types of beans. I have used kidney beans, great northern beans, garbanzo beans, pinto beans, etc. This recipe is also easily doubles or triples and becomes even more interesting with a variety of beans. Enjoy!
