Introduction
Excellent gluten-free pancakes created by my friend Anna. Easy to make. Excellent gluten-free pancakes created by my friend Anna. Easy to make.Number of Servings: 9
Ingredients
Whole Grain Oat Flour, 1.5 cup
(You can make oat flour by grinding oatmeal in a blender on "mix".)
Blue Corn Meal, 0.5 cup
Yogurt, plain, low fat, 2 cup
Egg, fresh, 2 large
Salt, 1 tsp
Baking Powder, 1 tsp
Butter, unsalted, 2 tbsp (melted)
Directions
Makes 9 pancakes.
Mix oat flour, bluecorn meal, and yogurt in a bowl. Cover with a plate and leave OVERNIGHT.
In the morning, uncover and add the remaining ingredients. Stir until all is blended.
Preheat a skillet or frying pan. Lightly grease the surface with butter or oil. When drops of water dance on the skillet, pour batter into skillet. When bottom is golden brown, flip the pancake and cook the other side.
Serve hot with butter, syrup, yogurt, or jam.
Serve cool with peanut butter and jelly. Make a tasty sandwich!
If you are looking for a change, try making the cakes into SAVORY PANCAKES. (My boyfriend and I love them in the morning!)

* Blue cheese crumbles, diced fake bacon
* Pinch of garlic powder and a tbs of parmesan cheese
* Banana slices and a pinch of nutmeg (Also great for peanutbutter sandwiches!)
* Feta cheese crumbles and a few cilantro leaves
