Ingredients

    Pam Cooking Spray
    1 cup, Onions, chopped
    3 clove Garlic, minced
    1 cup, Green (or Red) Peppers, chopped
    1 cup, Carrot, chopped
    3/4 cup, Celery, diced
    1 cup, Mushrooms, sliced
    28 oz can Tomato Sauce
    1 Can Corn (undrained)
    1 Can Red Kidney Beans
    1 Tbl Chili powder
    1 1/2 tsp Oregano
    1 1/2 tsp Basil


Directions

Spray large sauce pan with cooking spray. Saute onions, carrots, garlic until tender. Stir in green & red peppers, celery and chili powder. Cook until vegetables are tender about 6 minutes.

Stir in Mushrooms and canned tomatoes, beans, and corn. Season with oregano, and basil.

Bring to a boil and reduce heat to medium. Cover and simmer for 20 minutes. Stirring occasionally.
