Introduction

This is a mish mash of all sorts of different vegetables. You can mix it up and add different things or leave some stuff out. My husband isn't fussy about the strawberries, but I kind of like them.

Ingredients

    2 oz spinach
    6 mushrooms, sliced
    2 carrots, peeled and grated
    1c. shredded cabbage, purple or green
    1 stalk celery, sliced or grated
    2 scallions, sliced thin
    10 grapes, halved
    5 medium sized strawberries, sliced
    1 tbsp pinenuts
    1tbsp sunflower seeds
    10 slices bell pepper, whatever colour you like
    2 cauliflower florets broken up into little pieces
    2 broccoli spears broken up into little pieces
    1/4c. raspberry vinaigrette
    2 tbsp dried cranberries

Directions

Chop all veggies into bite sized pieces or grate with food processor. Mix all ingredients together and serve. How much easier can it be!
