Ingredients

1 1/2 lbs chuck, pot, or shoulder roast
1 TBS olive oil
1 large onion, peeled and chopped
2 large carrots, peeled and chopped
2 TBS flour
1 cup stock or water
1 TBS ketchup
1 TBS Worchestershire sauce
Seasonings to taste
1 1/2 cups peas, fresh, frozen, or canned
1 1/2 cups corn, fresh, frozen, or canned
3 cups mashed potatoes
Directions
Saute onions and carrots in oil. Cut roast into about 1 inch cubes removing visable fat. Add meat, flour, seasonings to taste, stock, ketchup, and Worchestershire to the onions and carrots. Cook on low for 1 hour. Stir in peas and corn and transfer to individual baking dishes or a single large baking dish. Spread mashed potatoes over the top. Bake for 30 minutes at 400 F.
Notes: Most any type of cubed or coursely ground meat can be used, as well as other types of vegetables. May be frozen before baking but remember to adjust baking time and temperature if baking from frozen state.
