Teenie in size, but packs a punch! If you like chocolate and dark beer, you'll love this lighter variation of a great cupcake! Ingredients

    24 packets of stevia sweetener (such as Truvia)
    1 cup granulated sugar
    1 bottle of your favorite stout beer (Guinness, Brooklyn, etc.)
    2 cups whole wheat flour
    1 egg
    2 egg whites
    .75 cup unsweetened cocoa powder
    .75 cup nonfat plain Greek yogurt
    1 stick (1/2 cup) I Can't Believe It's Not Butter for Baking, melted
    1 tsp vanilla extract
    1 tsp baking soda

Directions

Preheat oven to 350 degrees F. Grease a mini-muffin pan, or put paper muffin cups in a mini-muffin pan.

Mix the dry ingredients in a bowl until combined.

In a separate bowl, mix the beer, vanilla, and yogurt using an electric mixer. When thoroughly combined, add all egg ingredients.

Add the dry ingredients to the wet and mix until combined.

Pour in muffin cups until each is 3/4 full. Bake for 12 minutes or until toothpick comes out clean from center. Let cool completely before frosting.

Yields approximately 96 mini cupcakes, 4 per serving.
