Ingredients

    • 1 1/2 tablespoons butter, melted

    • 1/4 teaspoon grated lime rind

    • 1 1/2 tablespoons fresh lime juice

    • 1/4 teaspoon salt

    • 1/4 teaspoon ground red pepper

    • 8 ears shucked corn

    • cooking spray


Directions

1. Prepare grill or broiler.



2. Combine butter, rind, juice, salt and pepper in a small bowl.



3. Place corn on grill rack or broiler pan coated with cooking spray. Cook 10 minutes, turning frequently. Remove from heat and brush corn with butter mixture.



Makes 8 servings (1 ear of corn with 1 tsp lime butter.)

    The traditional Mexican street vendor version of this is to cook or even overcook the corn in water, then rub it with lime and sprinkle a bit of coarse salt over the whole. No fat at all. The lime butter approach sounds intriguing, and I love the sweetness grilling gives the corn. Nice recipe!!! - 11/28/08

    Here's a technique alteration.
    Instead of drawing butter, mix spreadable corn or canola oil with seasonings. Take a good size dollop of the mixture and peel back the husk (don't remove it). Put the oil mix on the corn and rewrap the corn in it's husk.
    Grill as described in the recipe.

    Great recipe! Note for some: If you put butter/oil on the corn before cooking it tends to result in singed/browned kernals, whether broiling/bbq, husked/unhusked, aluminum foil or not. However, the lime, peppers, etc. can be put on it before cooking w/out the singe. - 2/20/10

    I have never liked corn. I decided to make it for some company for dinner. I tried a bite and immediately fell in love. This is an awesome recipe. Even if you don't like corn give this a try. I made extra lime sauce and coated the corn while it was still on the grill too. AWESOME! Will make again! - 3/9/10

    I made this recipe for a BBQ and everybody raved about it!
    We cleaned the silk off the corn, then tied the shucks around them and soaked in water for a while before putting it on the grill.

    I am not buying the nutrition facts here. The nutrition tracker on this site says a (half) cob is 90 calories - how could a whole one, with butter on it yet - be only 97??

    I tweeked this one a bit, but it was amazing! I seasoned the corn, added some spicy chili powder and then wrapped each ear in foil before putting them on the grill. The foil keeps the flavor sealed in the packet and keeps the corn moist. - 4/16/10

    Allergic to peppers, must eat low sodium, and forgot the fresh limes so no lime rind. Pulled back husks , added the mix and rewrapped. Definately needed more time to cook. My sister likes her corn (over) cooked in water but I like a bit crunchy. No one cared for the lime taste. Will not make again - 7/2/09

    I tried out this recipe last week. I really wasn't all too impressed. Perhaps because I didn't have any limes so I substituted with lemons.. I really don't think it made too much of a difference. It was just a very strong sour taste. Everyone else liked it though. - 6/16/09

    We used different instructions for grilling the corn, and I adapted the butter. I used slightly less butter, got very little zest from my lime, and raided my organic garden for herbs! I ended up mixing soft butter with lime juice, fresh herbs, and salt/pepper/garlic blend! Very good! - 7/30/15

  • Awesome corn! I made x-tra lime butter and my nephew brushed the ears while grilling to crisp and brown the edges, SO YUM! I didn't think it needed more butter later but my Hubby and niece both enjoyed all the buttery cilantro goodness again. All around a hit at our bbq. The only dish EVERYONE ate! - 7/3/14

    Instead of butter, I use my olive oil cooking spray on the corn and grill it on my stovetop. I also switch out the lime zest and juice to lemon zest and juice sometimes. - 6/29/14
