Introduction

Ingredients

    2 cups flour
    1 cup nonfat milk
    1 cup sugar
    1 stick butter
    1.5 tsp cinnamon
    1.75 tsp baking powder
    1/2 tsp salt
    1 large egg
    1/2 cup chopped pecans
    2 TBS brown sugar

Directions

Pre-heat oven to 360 degrees. Combine 1 cup flour, 1 cup sugar and 1.5 tsp cinnamon together. Add to these ingredients one stick of butter, chop with a pastry cutter or fork until it is a crumb-like texture. DO NOT use an electric mixer. Measure out 7/8's cup and reserve for later.

Add to the remaining mixture, egg, milk and remaining flour as well as the baking powder and salt. Stir together until mixed.

Turn into a greased 8x8 or 8x10 glass pyrex pan if you have one. Otherwise a metal pan is okay. Sprinkle the measured mixture on top along with the nuts and brown sugar.

Bake at 360 degrees for 35-40 minutes or until a test knife comes out clean. Serve hot. It makes sixteen pieces. You may prepare this for baking several hours before cooking, just put n a cool place or the refrigerator.

****This is a high altitude recipe. You may want to refer to adjustments on the web as to how to change it for lower elevation cooking. Also a pyrex dish allows you to more accurately judge when it is done because you can see how it is browning.
