Introduction
My aunt made a salad very much like this for holidays, although she uses currants instead of cranberries (hard to find where I'm at), and I'm still trying to master her 'dressing'. Either way, it tastes fantastic. Ingredients
-
4 cups iceberg lettuce, chopped
2 cups romaine lettuce, chopped
1 cup apples, peeled and diced
1 can mandarin oranges
1 avocado
1/4 cup celery, diced
1/4 cup dried cranberries, cut fine
1/4 cup walnuts, chopped fine
1-2 tsps lemon juice
1 Tbsp mayonnaise
1 tsp sugar
Directions
Remove the mandarin oranges from the can, reserve the juice.
Prepare salad-sized pieces of lettuce in a bowl. On top of this, put celery (diced), cranberries, walnuts.
In a second bowl, put 1-2 tsps lemon juice and half of the reserved mandarin orange juice/syrup. As you cut up apples/avocado, add them to this mixture to prevent browning. Once apples/avocado are cut, carefully remove them from the liquid, again retaining the liquid.
Add remaining juice from mandarin oranges, 1 tsp sugar, and 1 tbsp mayonnaise to the liquid. Mix well, taste. It should be sweet, tangy, and a little tart. Pour overtop of all other ingredients, mix well. Let sit chilled for approx 30 minutes before serving.
