This is a fairly rich dish, but we love it for Easter or Summer picnics. Good fats are substituted for mayo.

I get raves every time I serve it! This makes a large bowl, enough to serve a group!!

You can cut this recipe down to serve a smaller family. It's almost impossible to mess this up - just taste as you go and adjust the seasonings.

This will keep in the fridge for several days. For best flavor, bring to room temperature before serving.

Ingredients

    6-8 LARGE Russet or Red Potatoes, boiled, peeled and chopped into 1" cubes
    2 med apples, diced
    1 med red onion, finely diced
    6 Claussen Pickle Halves, diced

    Dressing:
    2/3 cup each EV olive oil and Bragg's apple cider vinegar
    1/4 c. white or brown sugar (I use Organic Sugar)
    1 t. salt
    1-11/2 t black pepper

Directions

Boil and cool the potatoes till cool enough to handle. Peel and cube them and place in a large bowl, add the diced onion, pickle and apple.

In a measuring cup, combine the oil, vinegar sugar, salt and pepper. Pour over the potato mixture and toss lightly.

Makes 16 large servings.

Excellent with ham (if you eat meat) for Easter, and hard-boiled eggs. Bring to a pot-luck picnic too!
