Great easy Mexican dish that doesn't require a lot of thought. Great easy Mexican dish that doesn't require a lot of thought.
Number of Servings: 4


    * Chicken Breast, no skin, 6 unit (yield from 1 lb ready-to-cook
    * Cheddar Cheese, .75 cup, shredded
    * Salsa, 1 cup
    * *Rice, Kraft Minute Whole Grain Brown Rice, 1.0 cup
    * Beans, black, 1 cup


Preheat oven 350 degrees. Place chicken in baking dish. Cover with salsa. Cook for 25 minutes. Prepare rice (I used instant) and mix in beans. Set aside. Once chicken is almost done, cover with cheese and bake for the rest of the time. Serve hot!
