This is a nice change from split pea soup. This is a nice change from split pea soup.

Ingredients

    2 T olive oil
    1 1/2 c chopped carrots
    2 c chopped celery
    2 c chopped onion
    2 cloves garlic, minced
    2 c dried red lentils
    3 c chicken stock
    300 g lean ham
    7 c water
    thyme, salt, pepper, to taste
    2 t curry powder

Directions

Saute veg in olive oil. Add rest of ingredients and simmer until lentils are tender. Season to taste. Makes 10 1 1/2 c servings.
