Ingredients

2 cups water
14 oz. can coconut milk
1 veggie bouillon cube
freshly squeezed juice of 2 limes
3 tablespoons freshly squeezed lemon juice
2 tbs. soy sauce
1 tbs. chili oil
1 tbs. ginger powder
2 tsp. brown sugar
1/2 tsp. chili paste
1 block firm tofu, cut into small cubes
3 cups sliced mushrooms
2 tbs. minced fresh cilantro
Directions
Combine water and coconut milk in a 2-quart saucepan over high heat. When it boils, dissolve bouillon cube into the mixture. Reduce heat to a simmer and stir in citrus juices, soy sauce, chili oil and paste, ginger powder, and brown sugar. Add tofu, mushrooms, and cilantro and simmer for 20 minutes, stirring occasionally.
Serve Immediately in warmed bowls.

In my experience, cilantro is best added right at the end so it is still crisp and green. If I was making this soup I would omit the sugar. coconut milk is sweet enough. I would use light coconut milk so as to bring the fat grams down and I would use a few slices of fresh ginger, not ground. - 12/15/10
