Ingredients

    Chicken Breast, no skin, 4 unit (yield from 1 lb ready-to-cook
    *Potato, raw, 4 small (1-3/4" to 2-1/2" dia.)
    Carrots, raw, 2 medium
    Onions, raw, 1 medium (2-1/2" dia)
    Parsley, dried, 1 tsp
    Salt, 1 tsp
    Pepper, black, .25 tbsp
    *Smart Balance Buttery Spread, 4 tbsp
    Paprika, 2 tbsp
    Lemon juice, 1 tbsp
    Lea & Perrins, Worcestershire Sauce, 1 tsp
    Honey, 1 tbsp

Directions

Wash chicken and pat dry. combine potatoes, and onions in crockpot with parsley salt and pepper with 2 tablespoons of melted butter. Toss
Combine the rest of the butter with the paprika, lemon juice, and worcestershire sauce, honey a dash of salt and a dash of cumin. Rub chicken breasts with the mixture and arrange on the veggies.
Cover and cook on high for 3 1/2 to 4 1/2 hours or on low for 7 - 9 hours. Until chicken is cooked through and veggies are tender.

    Friday I made the full day method, and found by hour 5 the chicken was drying out pretty bad. I added half a box of chicken stock (2 cups) & made sure it reached (but didn't cover) the chicken. It ended up being much juicier & better. I also added the cumin as in the directions but not in the list - 3/14/11

    Tried this tonight for dinner. Chicken was a bit overdone by the time I arrived home after about 8 hours. The flavor was very good. I would try starting with frozen chicken instead of thawing if I make this again. - 12/3/12

    After reading some of the comments, I did include additional fluids. I used 98% fat free cream of chicken soup but would probably use chicken broth in the future. I also opted to substitute squash for the suggested potatoes. Great, peppery flavor and the chicken was tender and juicy. - 3/3/13
