Introduction

Ingredients

    2 eggs, beaten
    4 tbsp olive oil
    2 cloves garlic, minced or crushed
    1 tbsp curry powder
    1 cup chopped tomatoes
    1 cup baby spinach

Directions

Heat 2 tbsp olive oil in skillet. Add beaten eggs and cook until edges set, then lift edge and let liquid run into the pan. When cooked, flip omelet, cook other side and put on a plate. Cut into 2" strips.

Wipe out skillet, heat 2 tbsp oil. Cook garlic and curry powder on medium heat for a minute, stirring constantly to prevent burning. Add tomatoes and spinach (cover pan quickly as it will spit) and cook on high heat until spinach wilts. Add lemon juice and serve. Makes 2 servings.
