Introduction

I'm not good @ rolling enchiladas, so I find this method less time consuming, and it tastes the same, so why not. :) I'm not good @ rolling enchiladas, so I find this method less time consuming, and it tastes the same, so why not. :)

Ingredients

    1 lg sweet potato, cooked
    4 green onions
    tsp chili powder
    tsp oregano
    tsp cumin
    12 corn tortillas
    1 can enchilada sauce
    14.5 ounce can of tomato sauce
    3/4 c whole milk yogurt
    1/2 bunch cilantro or 1/4 cup sofrito** (optional)
    1 onion
    1 pound 4 ounces turkey. (1 pound is fine, but the package I bought had the extra 4 ounces...)

Directions

Preheat oven to 350.
Brown turkey, onions and spices in a pan. Set aside when browned.
In a bowl, mix sweet potatoes and yogurt. Smash together until well blended.
Combine enchilada sauce and tomato sauce.
In a baking dish layer enchilada sauce, tortilla, sweet potato and meat mixture, and repeat until it is all used up.
Cook for 20-30 minutes.
Remove from oven and put on plates. Top with green onions and serve.
